CBH IRISH SODA BREAD

One of our favorite holidays of the year is just around the corner and we’ve got St. Patricks Day celebrations in full swing here at the pub! Now, even from the coziness of home you can join in the Cambridge House spirit of St. Patricks Day with our CBH Irish Soda Bread Mini Loafs! Enjoy the recipe below, and tag us in a photo of your finished product. We would love to see it!

Traditionally Irish soda bread is baked in a round a loaf and sliced to serve.  To make things simpler for everyone we are baking mini loaves so everyone can have their own loaf!

Here is what you’ll need to make a bunch of mini loaves:

A mini loaf pan or two.

2.25 cups all purpose four

0.5 cup sugar

1 table spoon sugar

2 teaspoons baking powder

0.5 teaspoon salt

0.25 teaspoon baking soda

1 teaspoon caraway seeds

1 large egg

1 cup buttermilk

0.25 cup butter

0.25 cup canola oil

0.75 cup raisins

In a large bowl combine the 2.25 cups flour, 0.5 cup sugar, baking power, salt, baking soda and caraway seeds. In another smaller bowl beat the egg, buttermilk and oil together.  Stir your wet ingredients into the dry ingredients until just moist.  Do not over stir!

Fill greased mini loaf pan about ¾ full.  Sprinkle with remaining sugar.  Bake at 400°F for about 15 minutes or until a toothpick can be inserted and removed from the center cleanly.  Cool five minutes before removing loaves from pan. 

Serve warm or cold, these are delicious either way!
